Ingredients
For the pork:
- 1 small pork lion sliced into 1/2in medallions
- 1/4 cup of Crazy Bink’s Dry Rub or your favorite dry rub
- 1/2 cup of Olive Oil
For the Cabbage:
- 1/2 head of Cabbage
- 2 Fresno peppers
- 1 Jalapeno
- 1/4 Red Onion
- 1/2 Bell Pepper
- Salt and Pepper to taste
- 1/2 cup of Olive Oil
Directions
- Rough chop your vegetables.
- Add vegetables(minus the Red Onion) to a skillet with the oil and S&P.
- Cook the vegetables at medium heat until done, add the Red Onion, cover with a lid, then turn of the heat.
- Season your pork loin medallions.
- Heat up a second skillet to high, brown both side, then reduce to medium heat.
- Once the pork loin medallions are done, serve on a plate under a pile of the fried cabbage.
