Fried Pork Loin and Cabbage


For the pork:

  • 1 small pork lion sliced into 1/2in medallions
  • 1/4 cup of Crazy Bink’s Dry Rub or your favorite dry rub
  • 1/2 cup of Olive Oil

For the Cabbage:

  • 1/2 head of Cabbage
  • 2 Fresno peppers
  • 1 Jalapeno
  • 1/4 Red Onion
  • 1/2 Bell Pepper
  • Salt and Pepper to taste
  • 1/2 cup of Olive Oil


  1. Rough chop your vegetables.
  2. Add vegetables(minus the Red Onion) to a skillet with the oil and S&P.
  3. Cook the vegetables at medium heat until done, add the Red Onion, cover with a lid, then turn of the heat.
  4. Season your pork loin medallions.
  5. Heat up a second skillet to high, brown both side, then reduce to medium heat.
  6. Once the pork loin medallions are done, serve on a plate under a pile of the fried cabbage.
