Upgraded Deviled Eggs

Ingredients

  • 8 large eggs, hard-boiled
  • 1/4 cup mayonnaise
  • 1/4 cup reduced-fat sour cream
  • 2 tablespoons soft breadcrumbs
  • 1 tablespoon prepared mustard
  • 1/2 teaspoon salt
  • white pepper, to taste
  • 4 pimiento-stuffed olives, sliced
  • paprika, optional, to taste

Directions

  1. Slice the eggs in half lengthwise and remove the yolks.
  2. Reserve 8 of the removed egg yolk halves for another use.
  3. In a small bowl, mash the remaining yolks.
  4. Stir the mayo, the sour cream, the breadcrumbs, the mustard, the salt, and the pepper into the egg yolks.
  5. Stuff or pipe the egg whites with the egg yolk mixture.
  6. Garnish the deviled eggs with the olives and the paprika.
  7. Serve.
