Garlic Skillet Potatoes


  • 2 tablespoons olive oil
  • 12 cloves garlic, peeled
  • 2 pounds potatoes, cut into 1/4-1/2-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large sweet red pepper, cut into 1/2-inch pieces


  1. In a large cast-iron skillet or a similar heavy skillet, heat the oil over medium-low heat.

  2. Add the garlic cloves to the oil and cook, while stirring occasionally, until almost tender, about 10 minutes

  3. Increase the heat to medium.

  4. Stir the potatoes, the salt, and the pepper into the garlic and cook, while stirring occasionally, for 15 minutes.

  5. Add the red pepper to the potato mixture and cook, while stirring, until the potatoes and the red pepper are tender, about 10 minutes.

  6. Serve.
