Cajun Cabbage

Ingredients

  • 1 pound of ground beef
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) can of diced tomatoes and green chiles
  • 1 (8-ounce) can of tomato sauce
  • 1/2 cup long-grain rice
  • 1 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon white pepper, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon cayenne pepper, plus more to taste
  • hot pepper sauce, to taste
  • 1 small head cabbage, chopped
  • 1 cup Colby cheese, shredded
  • fresh basil, optional, for garnish

Directions

  1. Preheat the oven to 350 degrees F.
  2. In a skillet, cook the beef, green pepper, onion, and garlic over medium heat until the meat is no longer pink, about 6-8 minutes.
  3. Drain the fat from the skillet.
  4. Stir in the tomatoes, tomato sauce, rice, salt, basil, oregano, white pepper, black pepper, cayenne pepper, and hot sauce.
  5. Spread the mixture into an ungreased 9×13-inch baking dish.
  6. Top the beef mixture with the cabbage and the Colby cheese.
  7. Cover and bake until the rice is tender, about 65-75 minutes.
  8. Garnish with fresh basil and serve.
