Grandpa’s Rice Pudding

Ingredients

  • 3 1/2 cups 2% milk
  • 1/2 cup long-grain rice, uncooked
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • ground cinnamon, to taste

Directions

  1. Preheat the oven to 325 degrees F.

  2. Grease a 1 1/2-quart baking dish and line a baking sheet with foil. Place the baking dish on the baking sheet.

  3. Add the milk, the rice, the sugar, and the salt to the saucepan over medium heat and bring the mixture to a boil, stirring constantly.

  4. Transfer the rice mixture to the prepared baking dish.

  5. Cover the dish with foil and bake the rice mixture, stirring every 15 minutes, for 45 minutes.

  6. Carefully add the raisins and the vanilla to the rice mixture and stir to combine.

  7. Bake the rice mixture, covered, until the rice is tender, about 15 minutes.

  8. Sprinkle the top of the pudding with the cinnamon.

  9. Serve warm, or refrigerate and serve cold.
