Rattlesnake Bites


  • 4 cups pepper jack cheese, shredded
  • 2 jalapeños, seeded and diced
  • olive oil, to taste, for frying
  • 1/2 cup flour
  • 1 egg
  • 1 cup milk
  • 1 1/2 cups breadcrumbs
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder


  1. In a large bowl, add the pepper jack cheese and the jalapeños and stir to combine.

  2. Shape the jalapeño mixture into 1-1/2-inch-thick balls.

  3. Place the balls back into the bowl and freeze until chilled, about 30 minutes-1 hour.

  4. Once the balls have chilled, in a deep pot, heat the oil to 350 degrees F.

  5. In a bowl, add the flour.

  6. In a small bowl, add the egg and the milk and whisk to combine.

  7. In a third bowl, combine the breadcrumbs, the cayenne pepper, the paprika, and the garlic powder.

  8. Roll the balls, one at a time, in the flour, the egg mixture, and then the breadcrumb mixture.

  9. Place a few of the balls at a time in the oil and fry until golden and crispy, about 3-4 minutes. Repeat until all of the balls are fried.

  10. Transfer the bites to a paper-towel-lined plate to drain.

  11. Serve.
