On-The-Bayou Soup

Ingredients

  • 1 (20-ounce) package Hurst’s® HamBeens® Cajun 15 Bean Soup®, plus the enclosed seasoning packet
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 cup celery, diced
  • 2 cloves garlic, chopped
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 2 cups turkey, cooked and diced
  • 1/2-pound smoked sausage, sliced
  • 1 (14.5-ounce) can diced tomatoes
  • salt, to taste
  • pepper, to taste
  • parsley, optional, to taste, chopped, for garnish

Directions

  1. Rinse the beans and remove any unwanted debris.

  2. In a 6-quart slow cooker, add the beans, the onion, the bell pepper, the celery, the garlic, the chicken broth, the water, and the turkey.

  3. Cover and cook on high until the beans are tender, about 5-7 hours.

  4. Add the reserved seasoning packet, the sausage, and the tomatoes and their juices to the slow cooker and cook until heated through and the flavors meld together, about 30 minutes.

  5. Taste for seasoning and add the salt and the pepper, as needed.

  6. Serve garnished with the parsley.
