Blueberry Banana Bread


  • 2 bananas, ripe and smashed
  • 1/3 cup Greek yogurt
  • 1/3 cup butter, melted, plus more for greasing
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • salt, to taste
  • 1 1/2 cups all-purpose flour
  • 1/2 cup blueberries


  1. Preheat the oven to 350 degrees F.
  2. Butter a 4×8-inch loaf pan, then line the pan with parchment paper.
  3. Butter the parchment paper.
  4. In a large bowl, mix the bananas, yogurt, and butter using a wooden spoon or fork.
  5. Add the sugar, egg, and vanilla and mix.
  6. Sprinkle the baking soda and salt over the batter and mix in.
  7. Add the flour to the batter and mix just enough to blend, do not overmix.
  8. Fold the blueberries into the batter until evenly distributed.
  9. Pour the batter into the prepared pan.
  10. Bake until a knife inserted in the center comes out clean, about 1 hour.
  11. Cool the bread on a wire rack in the pan.
  12. Transfer the bread from the pan and slice.
  13. Serve.
